Oscar’s Argentine Chicken

A recipe dictated to me by an argentinian friend, really easy and delicious…
Prep about 20 minutes including peeling potatoes; Cooking 1-1/4 hours:
Chicken pieces
Potatoes (about 6 -8 medium sized) peeled and cut in 4
Olive oil (1-2 tblsp)
5 cloves garlic
2 cooking onions
1 can tomato paste
chicken stock or water or a combination of the two
oregano and cumin (powder or seed)
salt and pepper

Preparation:  Sauté onion in olive oil, 4 mins, add crushed chopped garlic and sauté another minute or so. Put in the chicken pieces and brown. Add herbs and spices, mix tomato paste and liquid, pour over the pieces, add chopped potatoes, add enough liquid to cover, simmer on low for about an hour.
