Our 2015 sausage recipes


For 2lbs of ground lamb:

2 tsp kosher SALT, 1 tsp black PEPPER, 2 big handfuls FRESH MINT, 1 tblsp SWEET PAPRIKA, 2 cloved minced GARLIC, 1 LEMON and its ZEST, 1 tsp each OREGANO, BASIL, PARSLEY, CAYENE.


For 4 lbs of ground lamb

2 tsp each whole CUMIN SEED, whole CORIANDER SEED, whole FENNEL SEED, 2 tblsp each KOSHER SALT, MINCED GARLIC, 1 tblsp each HOT and MILD PAPRIKA, 1/3 cup ICE WATER
